*The Funderburk livery stable was torn down in the 1970s for BB&T to build a bank, which is now Grace O’Malley’s.

😁 Fun Fact… A former livery stable and cotton gin waiting room still exists as part of downtown fabric
Behind downtown Trade Street once stood the Renfrow cotton gin and the Funderburk livery stable. While the gin is gone, the little building on “Cotton Gin Alley” (where folks waited while their cotton was being processed) still remains and is part of the downtown walking tour.

🌽 Taste of the Week

A Taste of Autumn: North Carolina Apple Fritters

Nothing says fall in Matthews like the aroma of cinnamon and sweet apples. While our town doesn't have its own official recipe, we can enjoy a taste of North Carolina's bountiful mountain apple orchards right at home with this easy-to-make apple fritter recipe. Serve these warm, glazed treats for breakfast, brunch, or dessert, and add a local touch by grabbing your ingredients from the Matthews Community Farmers' Market.

🍏 Easy Apple Fritters

Ingredients:

For the Fritters:

  • 1 ½ cups all-purpose flour

  • ¼ cup granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 1 ½ teaspoons ground cinnamon

  • 2 large apples (Granny Smith or Honeycrisp recommended), peeled, cored, and diced

  • 1 large egg, beaten

  • ⅓ cup milk

  • 1 teaspoon vanilla extract

  • Vegetable oil, for frying

For the Glaze (optional):

  • 1 cup powdered sugar

  • 2–3 tablespoons milk

  • ½ teaspoon vanilla extract

Instructions:

  1. Prepare the Apples: Peel, core, and dice the apples into small, bite-sized pieces.

  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the egg, milk, and vanilla extract.

  4. Create the Batter: Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay. Gently fold the diced apples into the batter.

  5. Heat the Oil: In a deep pot or Dutch oven, heat about 2 inches of vegetable oil to 350–360°F.

  6. Fry the Fritters: Drop heaping spoonfuls of batter into the hot oil. Fry 2–3 fritters at a time to avoid overcrowding. Cook for 2–3 minutes per side, or until golden brown.

  7. Drain: Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

  8. Glaze (Optional): While the fritters are cooling, whisk together the powdered sugar, milk, and vanilla for the glaze.

  9. Serve: Drizzle the glaze over the warm fritters and enjoy!
